Wood handle over the tang of the blade. Wire wrapped as described. Why would you want to remove the wire? It would need to be re-wrapped in something if you did so.

The long edge is 9 7/8", the short (blunt) side is 7".

Q: Does this blade contain lead? Can it be used with food?

I wouldn't use it on food. It came with a warning to wash your hands after handling because of lead. We don't see the need to do that, really, but feel it isn't worth risking on food.
