Q: After running these through the dishwasher I can't help but notice the smell of soap, even after re-rinsing them out several times, any fix?

The lingering soap odor and taste has been a problem for me as well. Very disappointed!

Q: Can these bags go from freezer to a slow cooker?

I would say Yes. These are very thick silicone. Not the typical Ziploc bag you've used all your life. They are well built and scream quality. They are oven safe up to 425°. The instructions say you can take they from the freezer and place them in the oven (up to the temperature stated). I have been incredibly happy with multiple sizes I purchased a couple months ago.

I would. What with manufacturing and packaging, you don't know what's in them.
