Q: How do you get the paddle to stay in the machine and not the bread????

If you are going to bake the bread in the pan before the final rise take the ball out and take the paddle out and put the ball back in.

Q: I have two bread makers that both make 2lbs loaf, but the pan sizes are so different. Why both machines claim for 2lbs with different pan size??

some breads are more dense than others. a 2lb loaf with lots of yeast and dough conditioner might overflow a smaller pan. this machine has a ~2.4 liter pan (~10cups). that's a little on the small side, so whenever i try a new recipe for the first time i make it as a half-size loaf. if you stay under 300g of flour (~2.5cups) you should be fine regardless of the recipe, but 500g (~4cups) would be pushing the limits and might overflow with some recipes. my normal beer bread recipe uses 420g of flour and still has a couple centimeters of air on top. oddly the weight-based system makes sense from the mixing perspective since larger loaves need more kneading to get the gluten properly tangled up. if you put a 3lbs loaf in a 2lb machine it might not overflow, but it will probably be way too dense to be tasty because the gluten matrix won't be strong enough to trap the co2 from the yeast.

Q: Do you have to use specific mix for bread machines or can I use scratch ingredients?

Scratch ingredients. But they do make an instant yeast for bread machines.

Q: Does it has a power on/off button?

Kind of like your stove, or your permanent microwave: The power is on all the time and the display is illuminated. There is a START / STOP button, kind of like setting cook times etc on your stove or mic. The bread machine, if left plugged in, does the same thing. Select your 'program', select the crust color; select the loaf size and press START. No big deal if you leave it plugged in or if you unplug it each time. I don't think people return their stoves or mics because the menu displays all the time.
