Mixes and recipes may vary. Fill the pan no more than 3/4 full to avoid overflow.

No that's not normal. You may want to return it or ask for a replacement

Q: Can you split a regular size bundt recipe in half and make two 6 cup bundts? Recipes for 6 cup bundt are hard to find. Any suggestions?

You are free to use any recipe that you wish! A great option would be to use a 12 cup recipe and cut in half to make 2, 6 cup Bundts. A 10 Cup recipe would also be close enough to fit :) Nordic Ware's Website does have a variety 6-cup recipes listed.

Q: 6 cup pan= one cake mix box. 12 cup= 2 cake mix box?

it will depend on the cake mix, most are 5-6 cups, and don't fill your Nordic Ware Anniversary Bundt Pan more then...3/4 full or a inch from the top of the pan. It shouldn't cover the top of tube.
