Q: Does this work like canning?

Definitely not. This simply removes air from your jar creating a vacuum which holds down the lid. If you tried to vacuum seal something like dry pasta in a vacuum bag, it would get crushed from the pressure of the bag, so sealing it in a jar keeps it from getting crushed. Pressure canning involves heat and pressure maintained steadily long enough to kill the botulism bacteria.

Q: can this be used to preserve tomato sauce? I usually have to use a boiling system

I would do the tomato sauce the way you usually do it. This vacuum sealer is more for dry canning. Items such as pasta, beans, etc.

Q: Why does this ad say "electric"? i see no cord. is the handheld unit "charged" from a port or "adapter" of some sort?

The main unit of the electric Mason Jar sealer contains a battery and does not need to be powered on while working. When the main unit is low on power, the main unit can be charged with the included USB cable.

Q: Does this work with resealing baby food jars?

If your baby food jar has either a wide- or regular-mouth mason jar opening, yes. If you mean standard baby food jar, it'd be way too big to fit that. This thing is literally for the two sizes of mason jar mouths, and is for sealing the flat lids with rings. Flat on the jar, push on the vacuum sealer, hit the button for 30 seconds or so, hit the button again and wait about 5 seconds. If the flat sealed, it'll still be on the jar when you remove the sealer unit. If the flat stayed in the unit, take it out, replace on the jar, and repeat. I've found if it doesn't work a second time, you may have debris on the rim, or the flat or the jar rim may be defective.
