Q: How many ounces do they hold?

Different products will weight in differently, but a liquid measure , i.e.volume, comes in at 2/3 cup to the ring on the inside that holds the leveler and shaker insert and about 3/4 cup to the top so that it still seals. These hold a lot and when I was going through my spices, I consolidated some dupIlicate spice bottles that were partially full into these and was pleasantly surprised. I did take some of the labels off my original jars and labeled others to make finding things in the cabinet much easier. There were some plastic film pieces with each jar and I put the cut off/torn off labels under those plastic film pieces and they are still stuck 6 months later.

Q: While using the shaker portion is the measuring spoon hole is open?

Yes. When opening the lid, both shaker and spoon hole are open.

Q: these containers are supposed to hold 5oz. I bought a jar of basil leaves 1.25oz. The contents of the jar do not fit in the container. 5oz is larger

This measurement is by weight, not volume so 5 oz of basil will not be the same as 5 oz of, say, salt.

Q: How well does the shaker top work? Would the holes be too big for cinnamon sugar or dusting with powdered sugar?

These seasoning keepers work quite well for powdered sugar. The holes are little large for cinnamon sugar but we use it for exactly that in our house! I just don't allow my six year old to shake, otherwise is will be cinnamon sugar for breakfast along with a little bit of toast!
