Good quality
very pleased with this wheat gluten flour. The package feels light and clean, good for storage, and the flour is very smooth indeed and a good colour. I make seitan sausage shapes out of it and but up and we need to supplement our vegan diet once or twice a week. Its also good for cutting thinly and using in sandwiches. A very economical purchase.

Excellent addition to granary flour for bread making
Since being diagnosed with type 2 diabetes I started to make my own bread but didn't like shop bought wholemeal bread. I make my own now, to a recipe I've developed just to my liking using granary flour. Unfortunately it is well known that such flours are low on gluten & tend to give a heavier bread. Using 10% (w/w) of vital wheat gluten gives a bread which lighter & excellent crumb. Now I can enjoy my bread!

Good for seitan (vegan 'meat' alternative)
I’ve tried a few brands of vital wheat gluten in the past, but this was the first time I have used it to make seitan. It took a couple of attempts to make, but the texture came out perfect—nice and firm, not rubbery or spongey. It binds really well and doesn’t have any odd aftertaste, which I’ve had issues with before from other brands. Great for both steamed and baked recipes. Also decent value for money considering how much seitan you can make from just one bag. Will definitely be reordering so I can keep experimenting with different vegan 'meat' alternatives!

Keto diet stuff.
I have been on a keto diet for a year now, and lost over 4 stone. On this diet, carbohydrates, including bread, are an absolute no no as it is loaded with carbohydrates. It is possible to buy keto bread, but the price is ridiculous, so I had a go at making my own, it was OK, but a bit cakey! Then I discovered a recipe using this flower, amongst other things, and it gives an excellent result, in fact very much like normal bread. Much cheaper than buying keto bread. It does not take too long to make a loaf in a bread maker machine, and it smells lovely too. So thank goodness for vital wheat flour!

I highly recommend this company. I have bought this from them already and my pack has only just finished. I use this in breadmaking with my homeground Irish wheat which due to our climate, has a lower level of protein. For a 50/50 whole wheat with strong white bread flour (200 -250 grams of each I use just one tablespoon of Vital Wheat Gluten. This gives my loaf a beautiful rise and structure. This is now almost the end of April and the pack has a BBF date of July. It has remained as strong and effective throughout as when it was first bought. I will always continue to use this supplier. If the quality is consistently good, why would I even consider changing to another brand. Highly recommended.

Does what it says.
My first attempt at making seitan was OK. The texture could have been better, but I think more kneading was required. I will try mixing with rye flour next and see what happens.
