Is it stable ? I want to use this shoe rack on carpet.

The shoe rack is awesome. I love it! Fits perfectly on carpet in my closet and it's stable.

Approximately how many pairs of shoes and some boots will it hold?

It will hold 10 pairs of shoes, 2 on each shelf. Boots would depend on how tall they are and how many. For example, if you only have 2 pairs of boots they could go on the top shelf, but if you have more, and they're tall, you'd have to remove one shelf and you could then have room for 2 pairs. But hiking boots would just fit like shoes. Hope that helps.

If you remove a shelf for boots, are you losing height of unit? Or just a shelf?

I have mine in 2 different sections. They include extra parts to do that. I have my boots on the top shelf. You can only get 2 pair of adult shoes/boots on each shelf.
