Can you use this on Goalkeeper Gloves?

I'd not use this on GK gloves, as it is designed for skin only and could prove to damage the gloves. I'm a keeper myself and I use a product called GloveGlu, whom Firstaid4sport work closely with for their first aid kits. This is a phenomenal product and I'd strongly recommend it, both for their tacky spray and cleaning solution. I hope this helps.

Can this go off in the can and lose its sticky

Had mine several years and its still as sticky as when I first bought it, hardly ever use it because its really-really sticky so my hands have to be super wet for me to resort to using it. I'm a outdoor tennis player so I usually use liquid chalk unless its throwing it down. Hope this answer helps.

Can this spray be used for point shoes like rosin?

can you spray it to the soles of walking boots and does it help? Mine seem to have no grip on slippy paths etc

Stickum is designed for pre-taping, and wouldn't recommend it for clothing. You may want to have a look into the Mueller B Sharp Traction Action, which is used mainly for athletic shoes but may be beneficial for you.
