Q: I would need some help to choose between two different models this company offer : (1000/ 6000) and (3000/8000). Can any one help please?

1000 will get a knife from not being able to smoothly slice a tomato to gliding through a tomato. 6000 will get it razor sharp so you can slice it with no pressure at all (mid air slice) 8000 is razor sharp and isn't needed for 99% of use cases and only the most expensive blades can retain that level of sharpness for a decent length of time. For most of your needs the 1000/6000 will be the best choice. 8000 is fun to have though

Q: Can you use this stone for woodworking chisel's?

Yes you can! My husband bought it to sharpen his planes and chisels. As he couldnt get a 6000 Grit Whetstone for them! His block plane, jack plane & 1 chisel so far, are all razor sharp. He said be sure to flaten out the Whetstone after sharpening the chisel. In an email from the seller we received an attachment with a leaflet for care of Whetstone. Hope this helps. Thank you

Q: Which grit would be needed for a butcher shop ?mainly boning knives and steak knives

The 3000 grit side is used to quickly bring a blunt knife back to sharpness, and would also be used to work out any dents in the blade edge (for example bone damage). The 8000 grit side is used to hone an edge that is already fairly sharp and make it sharper. If you sharpen frequently you may not always need to use the 3000 grit side.

Q: would it sharpen micro serrated scissors

I doubt it, as the stone is flat it would take off the metal around the serrations and flatten it. I think you need something more a needle file for serrations.
