Yes. I boil water often in this pan by using medium heat and with the lid on. The water will come to a boil without causing the insides or handle to burn. I never use high heat with this pan.

Does this take a long time to heat up on low heat?

Because you only use medium to low heat with these pans, it takes a little longer. I love the pan, so worth the wait.

Is it compatible with induction stovetop?

I read the Greenpan instructions on the Amazon site for this pan before I bought it to make sure I could use it for my purposes. This is what it says about cooktops: "Safe for all stovetops except induction". It's important to read all the details provided.
