Our Black Elderberry products are all processed using heat. Black Elderberry should be processed using heat, because the seeds in the berries contain cyanide (as do many seeds), however, the cyanide evaporates off at a very low temperature (78.26° F) . This product is pasteurized at 161°F. Gaia Herbs Black Elderberry Syrup is made using the fresh pressed juice of elderberries, and is not made from seeds, stems, or leaves of the elderberries.
