On the surface level they do appear to be vegan. However, the natural flavoring and sugar could potentially not be vegan. That depends on the method of sugar processing and the base ingredients in "natural flavor."

if I subscribe can I change flavors each month?

I don't see why not. I bought 5 boxes at one time, I don't continually get them. All the flavors are good

Good flavor ... some of the crackers may be cracked but not in crumbs ... Healthy way to curb your munching or to take with you when you are on the run and need something quick to eat. Crackers are of a nice size and crunchy, very filling.
