Ciao Bella! KitchenAid's Pasta Roller & Cutter: A Culinary Symphony in the Key of Spaghetti
Ah, pasta – the culinary equivalent of a warm hug from Nonna, a symphony of flavors that transports you to the cobblestone streets of Rome with every twirl of the fork. And what better way to channel your inner Italian chef than with KitchenAid's Pasta Roller & Cutter attachment? This masterpiece of kitchen engineering is like having a pasta-making Nonna in your very own kitchen – complete with a few quirks and plenty of love.Let's start with the basics, shall we? This attachment is like the Ferrari of pasta makers – sleek, stylish, and built to last. Made from heavy-duty materials that could withstand a Vespa rally through the streets of Napoli, it's as durable as it is dependable. Plus, the rollers and cutters work like a dream, effortlessly transforming a lump of dough into a symphony of spaghetti, fettuccine, or whatever pasta shape your heart desires. But beware, my fellow pasta aficionados, for even the mightiest of pasta attachments have their quirks. The cleaning process is like a culinary obstacle course, with nooks and crannies that are harder to navigate than a Venetian canal during high tide. It's enough to make you question whether the joy of homemade pasta is worth the hassle of scrubbing dough remnants from every crevice – but fear not, brave chefs, for the end result is always worth the effort. Now, let's talk about the real magic of this pasta attachment – the endless possibilities it brings to your kitchen. From classic spaghetti and meatballs to decadent fettuccine Alfredo, the only limit is your imagination (and perhaps your waistline). And let's not forget the satisfaction that comes from knowing you've created something truly special – a labor of love that's as comforting as a bowl of Nonna's homemade minestrone. In conclusion, KitchenAid's Pasta Roller & Cutter attachment is a must-have for any pasta lover's kitchen. With its heavy-duty construction, flawless performance, and Italian-inspired charm, it's like a culinary love letter to the art of pasta making. So grab your apron, dust off your rolling pin, and prepare to embark on a gastronomic journey that's as delightful as a gondola ride through the canals of Venice – because when it comes to homemade pasta, the only limit is your appetite!Pros:Heavy-duty construction ensures durability and longevityRollers and cutters work flawlessly to create perfect pasta every timeEndless pasta-making possibilities bring Italian-inspired joy to your kitchenCons:Cleaning process can be a bit challenging, requiring extra effort and attention to detail

My Baking Buddy
Sturdy, easy to use, and worth my money. It is understandable to be heavy because it is made heavy duty. Make baking easy.

Fresh pasta whenever
I added the KitchenAid Pasta Attachment to my collection of kitchen gadgets. As someone who loves cooking from scratch, this attachment has made the process of creating fresh pasta incredibly easy and fun (especially with the kids). The attachment is compatible with my KitchenAid stand mixer, and it was simple to install. It comes with two pasta roller cutters (for spaghetti and fettuccine) and a roller for flattening dough into sheets. The instructions were clear, and I was able to start making pasta right away. The results are amazing! The pasta dough rolls out evenly and smoothly, and the cutters produce perfectly shaped noodles every time. The only minor downside is that it requires a bit of practice to get the dough consistency just right, but once you get the hang of it, the process is smooth and enjoyable.

Would recommend rollers
Worked just as I had hoped. They were easy to use, made spaghetti in no time. They seemed like a heavy, nice quality metal.

Excellent In Every Way
I'm an enthusiast level cook. Also Italian and I've been making pasta with a manual machine for...decades! I don't know what I've been waiting for to getting an attachment for my KA 7 quart mixer. This attachment is nothing short of excellent.First, forget all the... foolish reviews that cite difficulty in cleaning. Neither the rolling or cutting units require ANY cleaning other than maybe blowing an wiping with a dry towel. The trick - and I'm just guessing what people are doing wrong - is to make a slightly moist mix of approximately 100 grams flour and 60 grams combined eggs and water. This is also a good amount per person. If you have big sons that eat three helpings, you'll have to double the amount! After a few minutes of kneading it should be plastic almost like silly putty, maybe a bit more resistant. Be sure to rest it at least 30 minutes.I always used the one handful/one egg like my momma used to do. This resulted in dough that was usually too dry. If you don't have a scale, get one. Anything involving flour needs to be weighed! The last advice is to flour the dough at every pass and flour after the last pass. 7 is a good thickness for fettuccine. I love a good 1/2" hand cut pappardelle: just fold the slabs and cut by eye. a slight irregularity is wonderful. I recommend this for smaller quantities as it's much more time consumingI was amazed at the solid, heavy unit. The fit and finish is great and the mount (for all the attachments) is nothing less than superb. My "production" speed without having to turn the handle with one hand and feed with the other is fabulous! I wish I had done this years ago.Don't hesitate! Buy the real KitchenAid version! One final hint. When cutting the pasta: place a cutting board under the cutter and move it a couple of inches after every 12-14" slab is cut. I take a handful of flour with one hand and feed the sheets of dough with the other. Dust each pile of fettuccine lightly as you go: feed, dust, move the cutting board and repeat. (I was a manufacturing engineer is another life).PS I don't own stock in, nor was I paid by Kitchen Aid - LOL - Enjoy!PS AP flour will work fine, or a fine Duram flour, 00 flour. Any artisan bread flour is perfect. And do yourself a favor and buy organic. Check out Central Milling. Whole wheat will work, but it's not as delightfully decadent in mouth feel.
