They are more like dri-fit material. Definitely not fleece. These will help to shield your hands from the sting of the cold wind during winter runs, but I wouldn't say they are going to insulate your hands.

What size should be bought for a size 7.5 or 8? Size chart is missing this range. Probably a sign these are made in China unlike their shoes.

I would advise a medium based on your stated hand size. I have large hands(got the large) and these gloves stretch very well. If you are concerned where they are made, buy something else!

How much do these gloves feel like a second skin?

For me, it is between latex gloves and a light weight work glove made of cloth and latex.
