how does the frother fare with oat , soya milk and the like?

I use Oatly (barister style) long life milk and have noticed that the depth of froth is fantastic. You don't need as much as cows milk to get a good froth and for a large cappuccino I fill the jug just past the 1st marker. I once filled it to the 2nd marker and it frothed over the edge. Can't tell you about soya milk as I don't like it.

Instead of milk could I just add water to the jug so I could make an Americano?

You could but you don’t need to as you get different amounts of hot black coffee by pressing any of the 3 coffee buttons (ristretto, espresso, and lungi). You can adjust the amount of hot black coffee you get on each setting and I find that having adjusted the lungi button up to max, pressing it twice gives me a perfect tall Americano. Pressing the espresso once followed by the lungi once gives me a medium Americano.

Would I be able to use a mug with this machine?

Yes - there is 5.5 inches clearance between the bottom tray and the coffee spout. You can get a slightly taller mug in place by tipping the mug in place under the coffee spout, but I have no problems with normal mugs and latte glasses

Does this provide hot water for making tea also?

It is not the best option for making tea because: - the water is not hot enough for tea - it is designed to be used with a Nespresso pod inserted - the water might be coffee-flavoured if the machine had been used for coffee previously. I have a small Morphy Richards hot water dispenser which produces boiling water & makes a good single cup of tea in about a minute.
