Q: Can you use this interfacing for zippers on a jersey knit?

I guess you could. I use it for reinforcing shoulder seams and on hems for a nice crisp coverstitch hen.

Q: Is this made of polyester?

I don't know but it is a knit interfacing material. definitely not cotton. it is wonderful for stabilizing shoulders in knit garments or for hemming with knit garments.
