Sensor reading is always same as input voltage. Bad sensor? Did I damage it somehow?

If you wired it right, it should not be damaged. But this sensor is sensitive to other materials (not just water). Looks like a capacitive sensor. If I use mine close to a wood, or thick glass, it detects it. On free air, however, it should detect nothing. If you touch it it will detect you too.

I will be using this with the container that is not clear it’s a gray solid will this still detect through that color

I’d like to know if it would work for filling glass bottles conected to a solenoid valve, bottles are filled with a 1/4 steel pipe

you would have to try with your bottle but my experience has been if it is setup properly AND you isolate the valve control with a optoisolator based relay ($2 on this site) you will be ok. I've setup mine to fill my coffee maker when low and shutoff when filled. High level sensor is the failsafe if the flow rate is exceptional. remember that the sensor is 5VDC device and valves are usually higher voltage (12 or more VDC). So again, the sensor can't drive the valve directly!! use a relay

Can someone recommend a PCB mounted mating connector for this?

A 4 pin pcb header will suffice.
