Is there lactic acid bacteria used in the scoby culture to suppress alcohol content or is it mostly acetic?

Hey there - acetic acid is the predominant acid in kombucha SCOBY culture. Bacteria in Kombucha culture such as acetobacter consume alcohol produced by the yeasts (which is how acetic acid is created) making this a non-alcoholic drink with only trace alcohol (which we test).
