Lovely dessert options...
This brand of Nata de Coco is really good. And the Lychee flavor is excellent! I had previously ordered the Coco pandan flavor and opted to get the other flavors of Nata available.If you've never had Nata before, it is actually made by getting coconut water (which is actually the liquid endosperm that becomes the white coconut meat as the coconut matures) and adding a 'mother' liquor that creates a solid sheet of coco water gel. This gel is then cleaned and cubed. It has a chewy yet tender texture. Preserving it usually requires cooking it in a light syrup.If you've gone to Asian stores, you can find confections of seaweed/agar jelly in fruit flavors and with cubes of nata suspended in them. It's a very popular treat for children and is completely vegetarian.Asians use this mainly for desserts. One such example is a popular Filipino specialty, 'halu-halo'. Great for summer, it is shaved ice over a mix of candied beans/cooking bananas/sugar palm seeds, purple yam jam, macapuno (candied coconut sport), milk flan and nata de coco. This is topped off with evaporated milk or half and half. Mixed together, it's a bit of heaven for Asians on a hot summer day.You can also make the popular almond jelly with lychees usually served in Chinese restaurants and add the nata de coco for additional texture and flavor.Then, too, you can mix the nata in jell-o molds and fruit salad with heavy whipping cream.Fantastic treats.
