you can play with 2 or 3 or 4 players, the 4 player just tends to be a bit harder and more dangerous if your playing with people who are fast.

Is this game suitable to plane travel?

No, Dutch Blitz is not suitable for plane travel. It requires a table or similar surface for setting out 8-16 piles of cards which are actively used throughout the game. Also, it is very difficult to learn from the instructions alone: it is best to learn from someone who already knows how to play.

what happens when you get stuck and no one has a card that can be played?

The rule is that if you go through your deck without playing a card, you burn a card (take the top card and put it at the bottom of the deck in hand) and keep going. We've never had the game come to a complete standstill this way whether we've been playing with 2 or 4 players.
