Does it taste good in just hot water?

Yes, it has a spicy ginger flavor and I often drink this plain (just hot water) although it's awesome with a little honey and vanilla almond milk or coconut milk if you want a treat. This chai is awesome because the spices are so finely ground they are like a powder and the red tea is in there too - no steeping required. One of my favorites so far - try it out!

Can I buy the rooibus chai in a 1 pound bag?

Yes, it is available on Amazon, and is about 35% less expensive per oz than buying the 2 oz tin.

Can or should the 1-pound bag of tea be stored in the freezer to preserve freshness as I work through the refilling of the tea tin?

I am keeping my extra tea in an air tight container in my cabinet. Freezing will introduce moisture, which is not a friend to spices. By storing air tight in a dark, cool place, ground spices should keep their flavor at least for a year.
