Q: Can you use these on a griddle on top of an electric stove to cook pancakes or eggs?

According to the Dos and Donuts that come with it, you shouldn't put it in direct contact with any heating element. But, it does say you can put it on a baking sheet or PAN so you could probably line your pan with it when cooking eggs or something, though it's an odd size for that.

You should not be doing any cutting on these baking mats. But you can prepare food, kneed dough, etc on them.

Q: Are these safe for making candy, such as peanut brittle on?

Yes how ever the sugar will stain the the surface of the mat

Q: Can you use this to make fruit roll ups

You sure can. Actually this would be a great mat to use and a smart way to be able to pull them off of the pan without worrying about the sticky mess that occurs when you are using a plain pan, even parchment paper won't give you the results this silicone mat will. You should have a beautiful product.
