The body is plastic and the probe is metal. Very good thermometer by the way - indicates an accurate temperature in no time at all!

Screw will not turn please advise

Just return it to Amazon. Replace or refund. I got 3, not issues with any of them.

What temperature is the probe set at before inserting into meat etc.

I would probably guess it would be room temp as there is no setting as such
