I recently started grinding my own wheat berries, and will be making my own wheat flour. I read recently that when using whole wheat, adding a bit of sunflower lecithin will yield a much softer bread, and I can tell you, it really does!! My first loaf wasn't dry or crumbly, it was soft, pliable and just about perfect.

It works great for making smooth sauces! I routinely use it to make sauces that blend oils with watery ingredients. It opens up a lot of possibilities in the kitchen.
