how does the artist series compare to the xl series mix media pad

The Artist Series is 138 lb. compared to 98 lb. so it's much thicker and more resistant to buckling with wet media. The Artist Series is also a brighter white than the XL.

does it work well with acrylic paints?

I have painted gesso on a page and then did my acrylics and it was fine. I have not painted acrylic directly on the page without gesso.

Do brush pens fray with this paper?

My daughter uses brush pens, and has not communicated issues such as this to me.

does this work for water color paint?

It will probably work as long as you don't get it too wet.
