The best cocoa powder for baking and great for hot chocolate.
I’ve tried dozens of cocoa powders over the years for baking cakes and I keep coming back to this one. It’s dark and rich and is great if you want that real chocolate hit!I believe this is what is sometimes referred to as ‘dutch processed’ to neutralise the cocoa’s natural acidity to give a milder, earthier flavour (note the potassium carbonate in the ingredients). You can use it straight as many recipes call for, but if you want to really enhance the flavour to give that real chocolate taste it’s worth ‘blooming’ the cocoa powder first. This is where the required quantity of cocoa powder is mixed with hot liquid from the recipe. So if a brownie recipe calls for melted butter, just heat the butter and stir in the cocoa powder. For muffins or cakes that include milk, heat the milk (but not boil) and add the cocoa powder. Remember not to add it to egg mixture while still hot.It also makes for a rich drinking chocolate. Mix cocoa powder with a little cold milk first before then topping up with hot milk.Overall this is my go to coca powder and at the time of writing is cheaper and easier to get from Amazon than my local supermarket. It comes in a cardboard container (as pictured) with a foil, pull tab seal under a re-useable plastic lid, and seems to keep well if kept in a cool dry place.

The only cocoa suitable for drinking
Every other cocoa powder is either intended for baking or the Dutch cocoa variety (bitter). Bournville is the one for the classic hot chocolate taste.I don’t have a particularly sweet tooth so I make this (I’m sure some will balk with horror but give me a chance!):1 1/2 to 2 heaped tablespoon of cocoa powder in a mugQuarter full with boiling waterFill rest of mug with half or full fat milk (doesn’t work with watery milk or milk substitutes)Add sugar or Stevia sugar replacementMicrowave for 40-60 seconds (depending on your oven)Tastes like hot chocolate to me - but much less sugar and all the health and heart benefits from cocoa. I tried various coconut milks but as they’re mostly water they ruined the drink. In the early 20th century, Bournville cocoa powder was marketed as a sleep aid (like Horlicks today) but it’s actually more likely to give you a boost than send you to sleep!
