The "header" says set of 2 but the description says it contains 1. Which is it?

There should be 2. At least if you buy from Sabelka you will receive a set of 2 containers.

I need sealed storage. Why are there holes on the bottom?

I'm not positive, but I believe the storage is considered "sealed" because the bread is stored in the plastic bag it comes in (with top edges wrapped around the outside on the top) with the container top secured. Obviously, if the bag it comes in has holes, there will not be any seal. That's all I can figure out. Note that some of the newer store-bought bread types are not square slices, but often more rectangular - these to not fit in the container. I gave one away and kept but do not use the other.

Do I have to use this with the bag inside? Or can I take the bread out of the bag?

You could I guess but I can’t imagine why. The whole point of it is to use it with the bag pulled out and over the lip and the lid closes over the lip and rolled over bag and seals it. As you use the bread you pull the bag down the outside to move the bread close to the top. I have four extra of these in my freezer I use just to keep loaves from getting crushed and banged around in my freezer.

Is there an alternate side that fits larger “sandwich sliced bread”?

No. It will only fit loaves that are long and roughly square in shape, like Wonder bread or similar. Shorter, rectangular loaves like Oroweat will not fit without swishing the bread. I returned for this reason
