Tasty, tasty, tasty
I have sampled quite a few recipes from this book, they have all turned out amazing. One of the few recipe books, which uses ingredients found in any indian kitchen, and the cooking process is also explained very well - easy to follow for an amateur cook like myself. The only drawback, is that being a hardcover book, its not very portable.

Excellent thesis on Indian cooking. But paper quality is quite poor
Fantastic book by Dr. Pant. Very comprehensive tome on Indian cooking covering a vast range of topics. The only issue is the paper quality of the pages in the book which is almost on par with newspaper grade paper (except the photo pages) - with the price being charged, this is a collector's edition item and will need careful handling not to damage the pages.

Can be improved much....
With great expectations I bought this book as I had waiting for such a book for long. Quite costly,Overall not so bad, but surely can be improved much. The pros- It has a wide variety of recipes from different states of India. The recipes were given in authentic names of dishes rather than a English name. A good compilation, easily narrated recipes with simplicity. The cons- The paper quality is very poor, just newspaper quality, understand that to reduce the weight of the book. There is no Publisher detail page or a copyright detail page even it is published by a reputed publisher. It looks just like a printed book. Most of the recipes are from Punjab,Kashmir,Delhi,Awadh,Bengal,Rajasthan, and few recipes from Kerala, Tamil nadu,Andhra and very few from Goa,Gujarath,Karnataka and North east tribes. Totally avoided many regional cuisines and many states such as Assam,Odisha, North East states,Maharashtra, Bihar,UP,Jharkhand, Chatisgarh etc. It should have more recipes from all these states so that it can say a complete cookbook of India. The name of the dishes is wrong in local language, especially Kerala dishes. Many recipes mentioned with wrong origins, such as Pulusu are typically Andhra dishes, but it mention Tamil recipes. Ishtoo is a Keralite dish, but book says from Delhi. Kerala dishes mentions as Tamil, Andhra dishes given as Tamil, etc etc. Most Keralite recipes seems wrong and it suspects the ingenuity of the other recipes given.Certain dishes repeat more than once with different recipes. The pictures were mentioned with English names which not match with recipe names. It should be named in recipe names.Overall the book has to be much better than the present one as it's quite a costly book and from a reputed author and publisher, with much professional look like similar books published from Western countries.
