Q: Is the harvesting process bird friendly? Not done by machine at night when they are in their nests?

Q: Acidity level not mentioned ?

The acidity remains a mystery for years now. What it says on the front of the tin, is Intensity 02 which is unrelated to acidity. I know chemistry.

Q: Is it a good idea to buy large quantities at a time > 1 litre because of rancidity over time?

I use this olive oil all the time in cooking and salad dressings. Even so, a tin lasts around 4/5 months during which time the quality doesn’t suffer at all. Hope this helps

Sorry, most of the information on the tin is in Greek but, in any case, the table ‘nutritional declaration’ which has English does not carry acidity figures. If it’s of any help at all we buy this oil on a regular basis and have always been very happy with it.
